Mexican Quinoa

This recipe can easily be a healthy side dish or a main course! Many people have been asking me how to make quinoa taste good…well here is one option!

INGREDIENTS:

1 cup Quinoa
1 can organic low sodium black beans
1/2 sweet onion
1 red pepper
1 green pepper
1 red pepper
1 tbs cumin
1 tbs paprika
1 tbs garlic powder
1 tbs chili power
1/2 tsp sea salt
1 tsp pepper
1 lime
(Chicken, shrimp or tofu optional)

INSTRUCTIONS:

Cook onion, green and red pepper until tender. Mix them with cooked quinoa and other ingredients. Squeeze fresh lime juice over the mix before serving. ENJOY!
