Coffee Protein Cake

Craving something sweet this morning? Try this healthy coffee protein cake! Very moist and delicious. 🙂 And as a plus it is gluten free and grain free!

INGREDIENTS:

1 cups almond meal/almond flour
1 scoop vanilla or chocolate protein powder
2 tsp unsweetened cocoa powder
1 tsp baking powder
1 egg
1/4 cup almond milk
1/4 cup plain Greek yogurt
2 tsp vanilla extract
2 tbsp coffee
2 tsp maple syrup
1/3 cup mini dark chocolate chips (optional)

INSTRUCTIONS:

1.Preheat your oven to 355 Degrees.
2.Grease your cake pan.
3.Combine all ingredients in a mixing bowl.
4.Bake in oven 20-25 minutes until a fork comes out smoothly.

*This recipe makes one small cake! I doubled mine to make a bigger one. 🙂 ENJOY!
