Chicken & Black Bean Tacos

The perfect recipe for TACO TUESDAY…  Even though its THURSDAY… I would eat these ANY DAY! Delicious!

INGREDIENTS:

Organic Chicken Strips
Organic Corn Tortillas
Red Onion Chopped
Low Sodium Black Beans
Plain Greek Yogurt
Salsa
Black Bean Hummus
Cilantro
Cumin
Paprika
Sea Salt
Garlic
Black Pepper
Olive or Melted Coconut Oil

INSTRUCTIONS:

1. In a bowl, paint chicken with 1 Tbsp of oil.  Season with cumin, paprika, sea salt, garlic, and black pepper to taste.  Grill on a grill pan or on a grill until cooked.
2. Heat up corn tortillas in microwave or over stove until warm.  Paint Greek yogurt, salsa, and black bean hummus onto the tortillas.
3. Place cooked chicken, chopped onion, black beans, and cilantro on top.
4. ENJOY!

** If you make these for dinner, switch the corn tortillas for lettuce wraps for a lighter meal.  🙂
